Our grandparents were renowned for their sweet potato pies in Louisiana; therefore, we wanted to create our own unforgettable delight. Sweet potato and cream cheese – what an odd, yet intriguing combination to try. Believe us when we tell you, sweet potato and cream cheese go together like two peas in a pod. We prepare our sweet potato cheesecake cupcakes using butter, brown sugar and cinnamon atop a graham cracker and pecan cookie base.
We blend fresh smashed sweet potatoes with cream cheese, spread it onto our crust, and top it off with vanilla whipped cream. For the ending, we sprinkle toasted pecans as the garnish.
